Just like in the old farmhouses, our wood-fired ovens are the heart of our kitchen. Not only our bread comes from the wood-fired oven—every dish is prepared over an open fire. The entire menu is planned around the wood-fired oven.

Our cuisine is fresh, modern, and rooted in our region. We use almost exclusively unprocessed raw ingredients, which we prepare ourselves with great craftsmanship. We completely avoid flavour enhancers, preservatives, thickeners, or industrially pre-made products. Our dishes are fresh, clear, and full of character. A beautiful presentation of our dishes matters to us. The focus is on flavour and the authenticity of the ingredients.

We don’t have a fixed menu because our cuisine is creative, follows the seasons, and offers a wide range. Our farmers live by the rhythm of the seasons and the weather. In coordination with them, we often only know a few days before an event which products will be available. Together with important information from our guests, such as allergies, we design an individual menu that includes everyone and makes them happy. Vegan and vegetarian dishes have just as firm a place as meat and fish dishes. The result is an exciting, unique surprise menu for every celebration, drawing on the best of the season and delighting our guests’ palates. We present this menu to our guests at the table.

Our commitment to using only ingredients that meet our sustainability standards doesn’t stop in the kitchen—it also extends to our entire drinks selection. Here, too, we are constantly looking for producers who fully share our philosophy and create special products. We’re proud to offer such a colourful, diverse range of lemonades, wines, beers, and spirits. It’s always exciting to discover new flavours.
